This terrific little bar will serve you well during the holiday season. It’s sweet, buttery, nutty and quite decadent.
Bottom Layer:
1/4 cup shortening
1/4 cup butter
½ cup brown sugar
1 cup flour
Mix together and press in bottom of 9 x 13 pan. Bake 10 minutes at 350 degrees.
Topping:
2 eggs, beaten
1 cup brown sugar
1 teaspoon vanilla
2 tablespoons flour
1 teaspoon baking powder
½ teaspoon salt
1 cup moist shredded coconut
1 cup pecans (or other nuts), chopped
Mix together topping ingredients. Spread onto baked bottom layer and bake another 15 minutes until topping is golden brown. Cool slightly; cut into bars.
