Served at the 2022 Berries & BarBQ Wine Trail, Bias Winery

4 (4 oz.) boneless, skinless chicken breasts
2 Tbsp chicken seasoning (we used VanZandt’s)
1/4 cup olive oil
3 Tbsp lime juice

Place chicken breasts in a plastic bag and add the seasoning, olive oil and lime juice. Marinate while preparing salsa. Place each breast on foil with your choice of sliced vegetables (peppers, zucchini, yellow squash, onions, mushrooms). Add Salsa on top of chicken now if desired. (see below) Seal foil packet and grill until cooked through.

Salsa:
2 cups diced mango
3 Tbsp minced red onion
1 cup diced red bell pepper
1 Tbsp lime juice
2 Tbsp fresh parsley (cilantro can be substituted)
Salt & Pepper to taste

Combine salsa ingredients in a bowl. Divide evenly on top of the chicken prior to sealing foil, or refrigerate and place on top of the chicken after grilling.
