3 pounds of chicken wings

Salt and pepper, to taste

Tony Chachere’s Cajun seasoning, to taste

Hickory wood chips for smoking

 

Season wings with salt, pepper and Tony Chachere’s Cajun seasoning. Place chicken wings on smoker racks. Add water-soaked wood chips to the tray on your smoker. Smoke wings maintaining a 250° temperature for 45 minutes to a hour.

 

Drizzle smoked wings with blackberry chimicurri sauce.

 

Blackberry Chimichurri Sauce

2 – 6 ounce packages of blackberries

3 cups fresh parsley, chopped

1/4 cup grated orange zest

3 tablespoons chopped garlic

2 teaspoons grated lemon zest

3 tablespoons fresh lemon juice

2 teaspoons ground cumin, toasted

salt and pepper, to taste

 

Blend blackberries, parsley, orange zest, garlic, lemon zest, lemon juice, and cumin in a food processor until well blended. Season with salt and pepper. Refrigerate until ready to serve.
