Served at the 2025 Farmers’ Table Wine Trail, Adam Puchta Winery

Ingredients:

3 lb. beef brisket
1 small onion
1 can of your favorite beer
24 flour tortillas
1/2 bunch of cilantro
1 lb. Cotija cheese
1 jalapeno, seeded
3 fresh tomoatoes
1 packet taco seasoning mix

Instructions:

  • Combine beer & taco seasoning to create a marinade for beef.
  • Marinate overnight. Smoke brisket for 4-6 hours until tender.
  • Dice and combine tomatoes, onion, and jalapeno.
  • Chop cilantro and add to taste.
  • Add salt & pepper to taste.
  • Warm tortillas
  • Slice brisket thinly
  • To serve, fill tortillas with a few slices of brisket and top with pico de gallo and cotija cheese.

Serves 24 tacos
