Served at the 2018 Say Cheese Wine Trail, Adam Puchta Winery


Poutine Gravy:

3 tablespoons cornstarch

2 Tablespoons water

6 Tablespoons unsalted butter

1/4 cup unbleached flour

16 oz. beef broth

8 oz. chicken broth

1 cup Adam Puchta Hunter’s Red wine

pepper to taste

1 lb. and 1/2 of prepared fries

1-1 1/2 cups Hemme Brothers cheese curds or curds of choice


Prepare gravy:

In a small bowl, dissolve cornstarch in water, set aside. In a large saucepan, melt butter. Add flour and cook, stirring regularly, about 5 minutes, until golden brown.

Add the beef broth, chicken stock, and Hunter’s Red wine, bring to a boil, stirring with a whisk. Stir in cornstarch, simmer for 3-5 minutes or until thick. Add salt and pepper to taste.

Toss prepared fries with poutine gravy and cheese curds till coated.

Serve with freshly ground pepper and Adam Puchta Hunter’s Red wine.
