Served at the 2013 Say Cheese Wine Trail
4 Tbsp butter
1/4 cup finely chopped celery
1/4 cup finely chopped onion
4 Tbsp flour
1/2 tsp salt
1/4 Tsp. white pepper
4 cups milk
1/2 cup nacho cheese
2 Tbsp. minced nacho chilies for garnish and added flavor
In a 4 quart oven proof ceramic dish (corning ware), sauté celery
and onions in butter till translucent in microwave. Add flour, mix
thoroughly, heat in microwave till bubbling. Add milk and return
to microwave on med. power, stirring frequently till mixture is
thickened. If soup is not smooth, use a hand blender to soften.
Add nacho cheese to hot mixture, stir till cheese is combined.
Serve hot with minced nacho chilies for garnish.
Very good with diced, cooked ham or shrimp for variation.
