Served at the 2022 Say Cheese Wine Trail, Curling Vine Winery

1 pound small curd cottage cheese
1/2 tsp baking soda
4 Tbsp butter
8 ounces shredded Swiss cheese
2 Tbsp grated Parmesan cheese (be generous, extra is good)
2 tsp Caraway seeds
2 Tbsp milk (optional)

In a small bowl, mix cottage cheese and baking soda. Let stand at room temperature for one hour (this allows the curds to break down and melt smoothly)
In a large saucepan, melt butter and Swiss cheese. Stir occasionally until completely melted.
Add the broken-down cottage cheese and Parmesan cheese and stir until smooth.
Add the Caraway seeds and stir.
If the mixture is very thick, add some milk.
Pour into containers (for storing or serving) and cool.

Serve with Rye bread, crackers, pretzels, or a spoon!
