Served at the 2023 Holiday Fare Wine Trail, Bias Winery

Ingredients:

2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp baking powder
2 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1/2 tsp allspice
1/4 tsp ground cloves
1 3/4 cup packed light brown sugar
3/4 cup vegetable oil
3/4 cup unsweetened applesauce
4 large eggs
2 tsp vanilla extract
1 cup buttermilk
1 cup chopped pecans. (optional)

Frosting:

12 oz. cream cheese, softened
1/2 cup unsalted butter, softened
3 1/2 cups powdered sugar
1/2 tsp vanilla

Preheat oven to 350°F. Spray a 9×12 pan with a non-stick baking spray. In a small mixing bowl, whisk together all the dry ingredients (except the brown sugar), set aside.
Pour brown sugar into a large mixing bowl, and break it up until no clumps remain. Pour in vegetable oil and applesauce, and mix well until combined. Mix in eggs and vanilla. Add half of the flour mixture and mix on low speed. Add buttermilk, then the remaining flour mixture.
Bake 28-32 minutes.

For the Frosting:

Cream butter and cream cheese until smooth. Mix in powdered sugar and vanilla until well blended

Serve paired with warm Holiday Spiced Wine!

Spiced Wine:

In a crockpot, add 2 bottles of Apple Weisser Flieder, 4 cups apple cider, 2 cups sugar, 3 cinnamon sticks, and 3 tablespoons of whole cloves. Heat until warm. Sugar can be increased or decreased based on personal tastes.
