Serve chilled over roasted turkey, duck or pork. Or serve with mild white cheese on crackers.
1 cup dried cranberries, chopped
2 cups Cherry Craisins®
1 cup dried cherries
1-1/2 cup fruity red wine
1 cup finely chopped tart apple
1-1/2 cup finely chopped celery
1-1/2 cup sugar
1/2 cup orange juice
1/2 cup white wine vinegar
3 tablespoon lemon juice
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon crushed red pepper
Combine red wine and 1/2 cup sugar in saucepan. Simmer over low heat for 10 minutes. Add chopped cranberries, 1 cup Cherry Craisins® and simmer for an additional 20-30 minutes.
In a microwave safe mixing bowl combine dried cherries, remaining Craisins®, 1 cup sugar, ginger, cloves, red pepper, lemon juice, orange juice and vinegar. Stir until sugar is dissolved.
Microwave on high for 4 minutes, stir and microwave on high another 4 minutes.
Transfer both to a stock pot and simmer on medium heat 10 minutes. Stir in apples, simmer another 10 minutes. Stir in celery and remove from heat. Let cool, then refrigerate.
