Served at the 2013 Chocolate Wine Trail

Cake:

Sift these ingredients together:

2 cups flour

1/3 cup Special Dark Cocoa

1 tsp baking soda

1/2 tsp salt

Combine in a mixer:

1 egg

3/4 cup buttermilk

1 tsp vanilla extract

 Add dry ingredients to mixer.

Add 1/3 cup vegetable oil and mix well.

Drop spoonfuls of mix onto greased parchment paper on cookie sheets.  Bake for 10 minutes in 350 degree oven.

Filling:

4 tbsp butter

1 1/2 cup powdered sugar

7 oz. marshmallow creme

several drops of black raspberry flavoring or 2 tbsp seedless raspberry jam

1/2 cup mini chocolate chips

Cream powdered sugar and butter together in the mixer.  Add marshmallow creme and flavorings.  When ingredients are well blended, stir in the mini chocolate chips.  Spoon filling onto bottom Cake, then place top cake on and serve with Robller Villa Rouge.  Makes around 24 Whoopie Pies.
