Served at the 2018 Holiday Fare Wine Trail, OakGlenn Winery
1 9-10 lb bone-in Ham
1 cup Mayonnaise
1/4 cup dill pickle juice
2 Tablespoons minced onions
4 stalks celery minced
1/2 cup dried cranberries
1/4 cup toasted slivered almonds
Carve ham in small chunks and place small amounts in a food processor – pulse several times till all chunks are minced. Empty processor bowl into a large mixing bowl and do the same with the remaining chunks of ham till all are minced. Remove outer shell of a small onion and cut in quarters and place in processor. Clean and cut celery stalks in 2-3 inch lengths and place in food processor with onion. Pulse till onion and celery are minced fine and put in the bowl with ham. To this mixture add dried cranberries, mayonnaise and dill pickle juice.
Combine all ingredients except almonds till well mixed. The mixture may be formed in large balls and rolled in toasted almonds or placed on plastic wrap formed into a long log shape and rolled in almonds.
