Served at the 2023 Holiday Fare Wine Trail, Curling Vine Winery


3 cups flour, divided
2/3 cup powdered sugar
1/2 tsp salt
1 1/2 cups unsalted butter, softened
3 Tbsp lemon zest
3 cups sugar
6 large eggs, room temperature
1 cup lemon juice


Preheat oven to 350°F.
Whisk together 2 1/2 cups of flour with powdered sugar and salt, then pour in the melted butter and mix until combined. Optional: add vanilla to taste
Press dough mix into a lined 9×13 baking pan
Bake for 20 minutes (until light golden brown)
Pulse sugar and lemon zest together in a food processor.
Add this mixture to the remaining 1/2 cup flour in a large bowl. Mix well.
Pour in lemon juice, add eggs and mix until completely combined.
Pour this filling into warm crust and return to oven, bake for 25 minutes
Cool for one hour, then chill in the refrigerator for 2 more hours
Dust with powdered sugar and cut into bars.
