1 cup butter
1 cup sugar
3/4 cup brown sugar, tightly packed
2 eggs
2 tsp vanilla
1 3/4 cups all-purpose flour
1 1/4 cups cocoa powder
1/2 tsp espresso powder
2 tsp baking soda
1 tsp salt
2 1/2 cup chocolate chips


Preheat oven to 350°F
Line a baking sheet with parchment paper or a silicone baking mat
Beat butter in a mixer until light and creamy
Add in sugar and brown sugar and beat until well combined
Add in eggs, one at a time, mixing until each is fully incorporated into the batter
Add in vanilla and mix
In a separate bowl, whisk together flour, cocoa powder, espresso powder, baking powder and salt
Slowly add the dry mixture, mixing until just combined
Stir in chocolate chips
Place balls of cookie dough on a baking sheet, about 3 tablespoons per cookie, 2-inch spacing
Bake for 10-12 minutes
