½ lb. bacon (fried and crumbled)
3 cups cubed potatoes
¼ cup minced onion
½ cup diced carrots
1 chicken boullion cube
2 cups water
1 teaspoon parsley
½ teaspoon salt
Dash of pepper

Boil ingredients until tender, then add:

1-½ cups milk or half and half
½ lb. Velveeta block cheese cut in slices
2 Tablespoons flour (last)

Stir frequently until cheese is melted. Goes well with a cup of hot mulled wine made with Bias Chambourcin.
