Served at the 2018 Say Cheese Wine Trail, Bias Winery

1 Tablespoon butter

½ onion, chopped

¼ cup melted butter

¼ cup flour

2 cups chicken broth

1 stalk celery, sliced thin

1 ½ cups chopped broccoli

1 cup matchstick carrots

2 cups milk

salt and pepper to taste

2 ½ cups shredded sharp cheddar cheese

 

Saute onion in 1 tablespoon butter until translucent. Whisk ¼ cup melted butter and flour together until smooth.  Gradually add chicken stock until smooth.  Add veggies and simmer until tender, about 20 minutes.  Slowly add milk, then cheese.  Add salt and pepper to taste.  Continue on low until cheese is melted and heated through. Serves 6-8

Paired with Bias Vidal and some crusty bread, this makes an excellent winter meal.
