Served at the 2019 Berries & BarBQ Wine Trail, Röbller Vineyard

3lbs Ground Pork – Smoked with the following seasoning for 1.5 hours. Make sure it is broken up well during the smoking time.  When finished, put in mixing bowl.  Add wine and 2 cups of BBQ sauce (Sweet Baby Rays or KC Masterpiece Original works well or both) Puree with blender stick then add the Blueberries. Move mixture to a pot and bring to boil and simmer for 45 minutes, the first 20 minutes uncovered.  Pour sauce over Mac and let cool.

I/2 cup BBQ spice/seasoning

¼ cup dried minced onion

¼ cup Roasted Garlic/Red Bell Pepper Seasoning (McCormick)

1 cup Gabrielle’s Blush Wine

3 cups fresh or frozen Blueberries

3 cups Mac Noodles. Boil with 2 tablespoons of BBQ Spice for 8-9 minutes.  Drain and place into a deep roasting pan with butter. Sprinkle with BBQ mix then let cool in the refrigerator.

½ stick butter

2 cups of shredded whole milk Mozzarella

½ cup grated Parmesan

After the combined ingredients have cooled (preferably overnight) break up by hand and fold in the cheeses.  At this point, it can be saved or go into the oven. Bake at 300°F for 40 minutes uncovered and serve.
