Served at the 2018 Holiday Fare Wine Trail, Bias Winery

4 cups Granny Smith Apples, chopped into small pieces

2 cups sugar

1/2 cup vegetable oil

2 eggs, slightly beaten

1 teaspoon vanilla

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

2 teaspoons cinnamon

1/2 teaspoon nutmeg1 teaspoon salt

1/2 cup milk

1 cup pecans, roughly chopped

Frosting:

1 (8 oz) package cream cheese, room temperature

1/4 cup butter, softened

2 teaspoons vanilla

1 cup light brown sugar

Grease and flour 9×13 pan set aside. In a large mixing bowl, combine apples and sugar. Stir in oil, eggs, and vanilla. In another mixing bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Add the dry mixture to apple mixture. Add milk and stir until just combined. Add pecans. Pour into pan and bake 30-40 minutes at 350°. Cool completely.

Frosting:

Beat cream cheese until smooth, add butter and beat until smooth. Add vanilla and brown sugar. Beat for 5 minutes until light and fluffy and sugar has dissolved. Spread over cake and refrigerate after frosting.
