Served at the 2025 Farmers’ Table Wine Trail, Robller Vineyard

Ingredients:

Corn Masa
2 lbs. boneless Chicken thighs
1 cup diced onions
1 jar mole sauce
2 cups diced celery
5 diced garlic cloves
8 oz. Cotija cheese
Large cupcake tin

Directions:

  • Mix corn masa, making a paste. Scoop into a greased muffin tin (half full) and press to make a shell.
  • Bake in a steam oven at 300 degrees for 35 minutes. Use a deep pan with water in the oven to create steam.
  • Cook down chicken thighs with diced onions, garlic, and celery until meat is tender. Let cool and shred meat.
  • Add mole sauce to the shredded chicken and simmer for 45 minutes. Add water to keep consistency while cooking.
  • Portion the chicken into mas shells and place in oven for 20 minutes at 300 degrees. Garnish with cheese before serving.
  • Serves 6-8
