Served at the 2022 Say Cheese Wine Trail, Bias Winery

Roasted Tomatoes

1 cup (or more) olive oil
2 lbs. Roma tomatoes halved lengthwise
1 1/2 tsp dried oregano
3/4 tsp sugar
1/2 tsp salt
1-2 garlic cloves, minced
2 tsp fresh parsley

Pour 1/2 cup oil into a 13x9x2 glass or ceramic dish. arrange tomatoes cut side up. Drizzle with remaining oil. Sprinkle with the remaining ingredients. Bake at 250° for 1 hour. Flip tomatoes and bake an additional hour. Flip again and bake until deep red and tender (about 45 minutes). Let stand at room temperature for 2 hours. Serve over goat cheese mixture on bread.

Crostini

1 loaf baguette bread
3 Tbsp olive oil
4 oz Goat cheese
1/4 cup ricotta cheese
1 Tbsp finely chopped basil
2 Tbsp grated lemon peel
salt and pepper

Heat a grill pan over medium heat. Brush 2 Tbsp oil on bread slices, and grill on both sides until golden. Stir cheese, basil, and lemon peel. Add 1 Tbsp oil until creamy. Spread the mixture on bread slices and top with tomatoes.
