Served at the 2022 Farmers’ Table Wine Trail, G. Husmann Wine Company

1 1/2 lbs ground pork
1 Tbsp pepper
1/4 tsp coarse ground pepper (for Chimichurri)
1 egg
3 garlic cloves, peeled
2 Tbsp red wine vinegar
1 cup bread crumbs
1 cup packed Italian flat-leaf parsley
1/2 cup extra virgin olive oil
1 Tbsp salt
1 tsp salt (for the Chimichurri)
1/4 cup packed fresh cilantro leaves

Preheat the oven to 350 degrees. Mix graham cracker crumbs,
sugar and butter. Put muffin liners in a muffin pan, and place 1 Tbsp
of crust mixture in each cup. Press to firm.
In medium mixing bowl beat cream cheese until fluffy. Add
eggs, lemon juice and sugar, mix until smooth and well
blended. Fill muffin cups 2/3 full with cream cheese mixture.
Bake 15-17 minutes. Allow to cool, then top with pie filling.
