Served at the 2016 Holiday Fare Wine Trail
2 lbs. ground beef
1 cup bread crumbs
1/4 cup chopped parsley
2 eggs
2 tablespoons minced onion
2 tablespoons soy sauce
2 cloves garlic, minced
1 cup dried cranberries
1 1/2 cups Bar-B-Q Sauce
3 tablespoons brown sugar
1 tablespoons lemon juice
Preheat oven to 375°.
Mix ground beef, bread crumbs, parsley, eggs, onion, soy sauce, and garlic in a bowl. Form balls, about 3 tablespoons, and arrange on deep baking sheet. Bake until browned, about 30 minutes.
Combine cranberries, bar-b-q sauce, brown sugar and lemon juice and cook over medium heat until hot, about 7 minutes.
Pour sauce over meatballs and serve hot. Depending on the size of the meatballs, makes about 30 meatballs. Also very tasty served with cooked pasta.
