Served at the 2014 Chocolate Wine Trail
Ingredients:
3 lbs. beef short ribs
3 oz. bacon (about 4 slices)
1 cup dry sherry
1 qt. beef broth
1 onion
2 cloves garlic
2 oz. bittersweet choclate
5 springs thyme
2 Tbsps flour
2 bay leaves
salt & pepper
Instructions:
Salt and pepper ribs heavily. Brown bacon. Sear ribs in bacon grease. Add onions, cook for 5 minutes. Add garlic and saute’ for 2 minutes. Add flour, cook for 2 minutes. Deglaze with sherry. Add remaining ingredients, cover and cook for 1.5 hours.
