Served at the 2013 Say Cheese Wine Trail

 

1 lb.  elbow macaroni

2  Tbsp. unsalted butter

2 Tbsp. all purpose flour

2 cup milk

2 cup shredded pepper jack cheese

1/2 cup diced red bell pepper

1/2 cup bacon bits

Prepare macaroni according to package directions.

Melt butter in a sauce pan over medium heat. Whisk in flour, cook for 1-2 minute.

Gradually add milk while whisking until smooth. Bring to a boil then reduce heat and simmer for 5 minutes.

Whisk in cheese until melted.

Combine macaroni, bacon, and red peppers in the sauce.
